A ship sailing away from you gradually goes out of sight, starting from the bottom and moving up the sides of the ship. The Earth is a sphere. As the ship gets farther away from you, it's working its way around the curve of the sphere. Since you can't see around the curve of the Earth, the lowest point on the ship that you can see moves slowly up the ship.
