When the soil water is in not sufficient to keep up with demands of transpiration (A process where plants lose water), the stomata closes. The opening and closing of the stomata is controlled by the guard cells. And because tugor is lost (less osmosis) This process is often called pasmolysis i.e the process where plants lose water in a hypertonic solution.
